Zucchini Bread

I’ve made this recipe 3 times this week, it’s that good. My husband doesn’t like sweets all that much, but he eats this and says it’s his favorite recipe so far. You can also freeze and save for a later date.


3 cups flour (360g)

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

3 teaspoons cinnamon

3 eggs

2 1/4 cup sugar (450g)

3 teaspoons vanilla

1 cup vegetable oil

2 cups shredded zucchini (i’ve also substituted 1 cup zucchini for 1 cup of greek yogurt)


Preheat oven to 325

Grease and flour 2 8×4 pans

In a large bowl, measure out and mix all the dry ingredients EXCEPT sugar (flour, salt, soda, powder, cinnamon)


In a mixer, beat together eggs, oil, sugar, and vanilla


Slowly add your dry ingredient mixture


Shred your zucchini into fine pieces. I used 2 larger zucchinis and it was enough


Stir into your batter with a spoon, then pour into your pans


Bake for 50-60 minutes, or until a fork poked into the center comes out clean. Ive had to do an extra 5-10 minutes before

Let sit 10-20 minutes in the pans after you take them out of the oven. Also, i’ve done this recipe without flouring my pans and when I took the loaves out of the pans, the bottom stuck. So make sure to grease AND flour your pans 🙂




Crockpot BBQ Chicken

This is another one of our family favorites. Its simple and has tons of flavor. The chicken is great on a bun with cheese on top or eaten plain.


1-3 chicken breasts, depending on their size

1 cup BBQ sauce

1/2 cup Italian dressing

1/3 cup brown sugar


I used 1 huge chicken breast since I’m only cooking for my husband and I. Place your chicken in the crock pot. Mix all other ingredients together and pour on top

Cook on high 4 hours or low for 7


After it’s done, you can pull it apart easily with 2 forks, it’ll be very tender. I usually do this and then let it sit for another 10-20 minutes so it soaks up the sauce


Done! I served it with baked potato wedges and brussel sprouts

3 Ingredient Crockpot Italian Chicken

I started making this recipe after I made BBQ chicken in the crockpot, I just switched up the ingredients. I love how tender the crockpot cooks chicken breasts, usually my chicken gets overcooked in the oven because i’m afraid of feeding my little guy undercooked chicken.


2 chicken breasts

3/4 cup Italian dressing

1 tablespoon Worcestershire sauce


Place thawed chicken breasts in your crockpot

Cover with the Italian dressing and Worcestershire sauce

I sprinkled a little garlic and herb seasoning on top as well

Cook on high for 4 hours or low for 7


(I also used 1 large breast because thats all I had thawed)

The Best Sandwich Bread

The Best Sandwich Bread

Ive been using this recipe for probably 6 months now. We go through a lot of bread so I wanted to try and make the perfect sandwich bread I could make at home. I went to the store to buy a bread machine, but the bread it made was too fluffy for sandwiches. It wasn’t dense enough and fell apart when it was sliced. So, here is the recipe for perfect sandwich bread:


6 cups flour (720g)

2/3 cups sugar (133g)

2 cups hot water

2 packets yeast OR 1 tablespoon + 1 teaspoon + 1/2 teaspoon

1.5 teaspoons salt

1/4 cup vegetable oil

You’ll need:

Mixer with paddle and dough hook attachments

2 9×5 loaf pans

Large bowl

Saran wrap


Add the sugar to the bowl of your mixer. Next, add the hot water and give it a quick little stir. Sprinkle the yeast on top. You want the water to still be hot when you sprinkle the yeast over the top


Now you will wait. I usually wait 10-15 minutes, however long it takes to start getting foamy looking

While waiting for this is when I usually measure out the next ingredients so that I can dump them in at the same time. Measure out the salt, oil, and half the flour. So 3 cups, or 360g

Now, dump in the 3 ingredients you have ready and mix on medium low with the paddle attachment for about 30 seconds.


Its a good idea to get your sink filled with hot soapy water so that you can soak your utensils. This stuff is a pain to clean up and soaking helps tremendously.

Now, switch to your dough hook and add the remaining 3 cups (360g) about a cup at a time


The dough will be very sticky, and the next step is to hand knead the dough for a few minutes. If you try and take it out now it will be too sticky to handle, so I always add a little more flour 1/4 cup at a time. It probably uses about 1/2 cup more every time i’ve made it

Flour your surface generously and keep a little bowl of flour on the side to add as you’re kneading (if its needed) Scrape the dough out of your mixer bowl and knead, adding flour until the dough isn’t sticking to your hands


Form the dough into a ball and place in a large greased bowl. Cover with saran wrap and let it rise for about an hour, sometimes less, sometimes more. I always go by how it looks in the bowl. If you don’t have saran wrap you can just use a kitchen towel and lay it over the top


An hour later, ready for the next step


Punch down the dough lightly


Dump the dough out of the bowl and separate into 2 even pieces


Flatten each piece out into a rectangle, then roll it into a loaf and tuck the ends under


Place seam side down into 2 greased 9×5 loaf pans. Cover with saran wrap again and let rise until its over the top, about an hour


If it doesn’t rise this high, thats ok. I forgot about mine and it rose higher than it usually does

Preheat your oven to 350 degrees F and bake for 25-30 minutes, until golden brown on top. Let sit for 10 minutes after you take it out of the oven, then take the loaves out of the pan to finish cooling. You can brush top with butter if you like

The bread tastes wonderful even plain. It also freezes great. (You might want to freeze 1 loaf since home made bread goes bad quicker than store bought)
